In Eifel dialect, buckwheat pancakes are also called "Heidschkooche", "Hedelischkooche" and "Heenschköchelcher".
Ingredients
150 g buckwheat flour
3 eggs
3 tablespoons of sugar
1 level teaspoon of salt
a little baking powder
1 1/2 cups of milk
possibly some raisins
Mix all the ingredients into a pancake batter and bake in lard or vegetable fat.
As a variation: use the same amount of sparkling water instead of milk.
